Instead, we carry out selective harvesting, where each olive is picked from the tree at the perfect moment of ripeness. This guarantees that only the best olives, at their optimum point, are used for the production of our extra virgin olive oil.
This process is possible thanks to the connection we have with the land. Our olive groves are located in privileged surroundings, in the region of La Mancha, near the archaeological site of Segóbriga, a place steeped in history. Here, the climate and soil create the perfect conditions for growing olive trees that produce olives of the highest quality. However, nature alone is not enough. The experience and knowledge of past generations has taught us to identify which olives should be picked and which can wait, ensuring that the oil we produce is unique and has an unmistakable flavour.
